Two guys met in a bar in Lincoln city, both with a passion for great food. The conversation quickly turned into the dream of bringing top quality New York pizza by the slice to Lincoln as they’d both been to New York before and agreed the New York style pizza should have way more love in the UK. Toby, being half italian and growing up on home cooked italian food from Naples was keen to spread his italian roots into a huge 20 inch pizza, sold by the slice or full pie.

A Trip to New York

Dave and Toby then agreed that a trip to New York was essential to ensure their NYC pizza was as authentic as possible. They booked their flights and flew across the pond for a week of hitting up the most famous pizza joints in all the 5 boroughs of NYC, and some not so known gems with the help of some friends from NY. After working their way around the 5 boroughs, they found a stand out joint in the Lower East side Manhattan. They agreed this is the taste they’d like to bring back to the UK. After talking to the owner they obtained the recipe for the dough. Dave and Toby felt excited to get back to Lincoln to start working on Lincolns finest pizza.

Established 2025

Now, Liberty Slice Co. is open. Toby and Dave have promised to only ever use the finest ingredients on their pizzas. With a marinara that was carefully developed to harmonise with the dough and the secret blend of cheeses, then adding top quality toppings, is the cherry on the pie (pizza).
